What you can expect
Venture behind the farm gate at Springfield Deer Farm in Mole Creek for an up-close butchery masterclass in the foothills of Tasmania’s Great Western Tiers. Your visit begins with a brief farm orientation and a chance to meet the deer, before farmer Joel Houghton demonstrates how a whole deer can be utilised from start to finish. With every cut explained along the way, you’ll gain a real understanding of how premium Springfield venison makes its way from paddock to plate.
As Joel works, questions are welcome throughout, and the small group setting keeps the conversation relaxed, personal and unhurried. He shares the story behind one of Tasmania’s most respected working deer properties, drawing on decades of experience in the very place it all happens. Light refreshments and a light meal round out the visit, making this half-day masterclass a rare chance for curious food lovers to connect with the people and produce of northern Tasmania.
